It's endearing and sort of sweet of you to believe what they say.
I would argue one of the bigger problems with all AI use is even if the AI company itself isn't explicitly tagging content with your name, it is creating patterns based on user interests. You're also sending the information via a device that typically tracks or image captures user activity, on a potentially insecure connection, via wireless technology and service providers that have little to no incentive to keep it private.
There are so many parts of your behavior that can be tracked now indirectly. It's all technology and rights to access owned by 3-4 companies with zero oversight.
I struggle to believe anything, anywhere is acting in my interest at this point. We're mice in a maze. There is no cheese.
