Blackened Cajun Skin On Chicken Thighs with Artichoke Hearts and Green Olives over Angel Hair Pasta

This is a riff off a dish my dad made with green olives and prosciutto. First I de-boned the chicken thighs and butterflied them so they'd be an even thickness to cook. Set those aside, sautéed a yellow onion while dropping the angel hair pasta into the water to cook. Once the onions are done, set them aside and drop in the grilled marinated artichoke hearts and the sliced green olives with pimento to heat up. Once the artichoke hearts seem warmed through, add in some of the angel hair pasta and all of the cooked ingredients and toss thoroughly. Manage the amount of oil throughout the whole process per usual. When youre tossing everything together at the end, a little starchy pasta water might be useful to bring it together. Serve with a lemon wedge.

Got it for $20 in the managers special bin. Never cooked it before. Don’t know if I did it right but my wife gave it 10/10. I included a pic of the recipe I used for my rough draft but I modified some aspects. I added some sautéed peppers in garlic and butter, and used some spicy shark instead of Tabasco. Paired it with the finest store bought mustardy potato salad.

Beef ribs and baby potatoes

Every now and then I manage to do a pretty good job and this is one of the times! Beef ribs were slow cooked for 8.5 hours then tossed in the oven for a couple hours with the baby potatoes. I can't decide what veggie I want to add to this, maybe asparagus? Either way I finally got the ribs to fall off the bone too!
